Sweet Potato Crust Pizza


Sweet potatoes are one of my favorite ingredients in the world. They’re:
- Packed with vitamin A
- Loaded with fiber
- Incredibly filling
- Relatively low in calories.
On top of that, they’re one of the most versatile carbs you can keep in your kitchen, meaning there are so many ways to prepare and utilize them.
This sweet potato crust pizza is a great example of that mindset. You're having delicious pizza that is filled with vitamins.

Instructions:
1. Start with 2 small sweet potatoes (boiled, steamed, or baked, whatever’s easiest)
2. Once they’re soft, place them in a nonstick pan and mash them down into a flat, pizza-style crust.

3. Spread 1-2 tablespoons of tomato sauce over the top
4. Add a few slices of low-fat turkey pepperoni
5. Sprinkle on about half a handful of shredded mozzarella
7. Cover the pan and let it cook until the cheese melts.
8. Finish it with some fresh basil, because flavor and presentation still matter.

The payoff is one SATISFYING dish that comes in at 300 calories, 21 grams of protein, and 11 times your daily requirement of vitamin A. It hits all the cravings without any of the regret.
