Super Simple Salmon Ceviche

Super simple salmon ceviche. Try saying that out loud without smiling.

This dish checks every box: no stove, no fuss, no weird techniques. Just fresh ingredients in a bowl, mix it up, and you’re done. It’s one of the easiest, most nutrient-packed meals I make.

Here’s what goes in:

  • 6 oz fresh salmon, cubed
  • 4 Persian cucumbers, thinly sliced
  • 1 ripe mango (I use Philippine mango if I can find it), diced
  • 1 tomato, diced (optional)
  • Juice of 4 limes
  • 1 small habanero pepper, finely chopped
  • 1 tsp salt
  • Fresh cilantro, chopped, to taste

Toss everything together in a bowl. Let it sit for a few minutes while the lime juice works its magic.

I usually serve this over a scoop of steamed rice. It’s fresh, light, packed with protein, and yes, it has carbs. Good ones. Because carbs aren’t the enemy. They’re fuel.
