Slimming Summer Cucumber Salad

When it’s hot outside, I like to keep meals light, crisp, and refreshing. Nothing does the job better than cucumbers.

This Summer Slimming Cucumber Salad is one of my go-to dishes. It’s packed with crunch, fiber, and hydration, making it the perfect way to start a meal. One of the most effective strategies for getting lean is managing how much you eat. Filling up on a high-volume, low-calorie dish like this helps naturally reduce your intake of heavier foods later on.

Here’s what you’ll need:

  • 6 to 8 Persian cucumbers
  • 4 tablespoons rice vinegar (sweetened, or add a pinch of monk fruit)
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon sesame oil
  • Roasted sesame seeds
  • Optional: ¼ grated jalapeño for a kick
  • Salt

Instructions:
Slice the cucumbers thin, add salt, and place them in a sieve to drain for 30 minutes. While they rest, mix your dressing: rice vinegar, soy sauce, sesame oil, and a touch of sweetener if needed. Pour it over the drained cucumbers and top with roasted sesame seeds.

This salad makes 2 to 4 servings and is a staple in my summer kitchen. Try it before lunch or dinner. You’ll feel satisfied and energized without overdoing it.
