Lean n’ Mean Blueberry Cheesecake

In my daily routine, I make it a priority to eat foods that make me happy. But when I have a goal to eat more nutrients, it can be challenging. Luckily this Lean n’ Mean Blueberry Cheesecake is one of those recipes helps me do both. A creamy dessert (yes, it tastes like dessert) that delivers over 45 grams of protein, stays under 20 grams of sugar, and takes about 30 seconds of actual prep time. No oven nor blender needed.

The idea: leverage high-protein ingredients and keep the sugar in check without sacrificing flavor or texture. I used a Trader Joe’s Biscoff-style cookie for the base (they're the best), but you can absolutely swap in whatever cookie you love. Mix it up, let it hang out in the fridge overnight, and you’re done. The texture sets perfectly, and the flavor somehow gets better with time.

I like to add fresh berries at the end. They add sweetness AS WELL AS fiber and antioxidants. It’s one of those small upgrades that makes a big difference nutritionally and visually.

Here’s the part that my family loves: it works incredibly well as a breakfast or post-workout meal. It’s satisfying, stabilizes blood sugar, and keeps you full. Sometimes only half a container is enough for me.
