Lean, Lite, Apple Pie Pancakes


Fall and winter always make me think of apple pie.
Apples are in season, the holidays are around the corner, and the smell of warm apple cider filling the house. I like this recipe because it captures all that flavor, but in a lighter, protein-forward way that works for everyday breakfast.

These pancakes are simple, comforting, and surprisingly filling (without the heaviness you’d expect from a traditional apple pie-inspired dish).
Ingredients
• 1 cup eggs
• 1 cup dried oats
• 1 apple, cored
• Plenty of cinnamon
Add all of the above to a blender and blend until smooth.

Pour the batter into a large bowl and fold in a handful of crushed freeze-dried apples. If you don’t have freeze-dried apples, any dried apples work well, just dice them into small pieces.

Heat a non-stick skillet and pour the batter to form pancakes. Cook until set and lightly golden on each side.
This recipe made five large pancakes, each coming in at around 90 calories with nearly 10 grams of protein.
Warm, lightly sweet, and packed with classic apple pie flavor — these are a great way to enjoy a seasonal favorite while keeping things lean and balanced.
