The Healthiest Toast and Jam You’ll Ever Have

I know that title is a bold claim. But once you try this toast with homemade berry chia jam, you’ll understand why I stand by it.

I started making this recipe one day when I had a handful of berries on their last legs. Rather than tossing them, I turned them into a sugar-free, fiber-packed, flavor-loaded jam that’s now a breakfast favorite in my house.

How to make this jam:

  • Toss your berries into a small pot over medium-high heat.
  • Squeeze in the juice of half a lemon.
  • Let it come to a boil, then mash it up with a potato masher.
  • Stir in 1 heaping tablespoon of chia seeds and 1 tablespoon of monk fruit sweetener (or sugar if that brings you joy).

Once it thickens and cools, you’re ready to build the toast.

Plate it up:

  • Toast one slice of your favorite bread.
  • Spread on 2 tablespoons of plain nonfat Greek or Icelandic yogurt.
  • Top with 1 tablespoon of your homemade jam.

That’s it. Simple. Beautiful. Delicious. And at just 75 calories and 7 grams of protein, this toast packs serious nutrition too.
