If you loved my green soup, you’re going to be obsessed with my #GetLean Body Reset Red Soup. This recipe combines vibrant roasted vegetables, protein-packed beans, and rich chicken broth to create a delicious, filling, and clean meal that’s perfect for your Body Reset goals.

Ingredients

  • 6 carrots
  • 6 tomatoes
  • 2 red peppers
  • Garlic and shallots (to taste)
  • Olive oil (for roasting)
  • 2–3 cups chicken broth
  • 1 can kidney beans (or any beans of your choice)

Instructions

  1. Preheat your oven to 400°F.
  2. Place the carrots, tomatoes, red peppers, garlic, and shallots on a baking sheet. Drizzle with olive oil.
  3. Roast the vegetables for 35–45 minutes until tender and slightly caramelized.
  4. In a blender, pour 2–3 cups of chicken broth. Add the roasted vegetables and the can of kidney beans.
  5. Blend on high for about two minutes until the soup is silky smooth.

Optional: You can add a little tomato paste for extra thickness and sweetness, but the recipe is delicious on its own.
