One-Pot Beef, Rice & Pepper Bowl

High in protein, easy to make, packed with simple ingredients, and makes enough for the week. This recipe delivers balanced nutrition without spending hours in the kitchen.

Ingredients

  • 2 lbs lean ground beef (93% lean)
  • 2 cups uncooked white rice
  • 1 bag Trader Joe's Assorted Chopped Peppers (about 16 oz)
  • 4 cups beef bone broth
  • 1 can black beans, rinsed and drained
  • ½ jar pickled jalapeños, chopped
  • Salt and pepper to taste

‍Directions

  1. Brown the ground beef in a large Dutch oven or pot.
  2. Add the chopped peppers and cook for 3 to 4 minutes.
  3. Stir in the rice, black beans, jalapeños, salt, and pepper.
  4. Pour in the bone broth and bring to a boil.
  5. Reduce the heat to low, cover, and simmer for 18 to 20 minutes, or until the rice is cooked.
  6. Let stand for 5 minutes, then fluff before serving.
