Ingredients
2 lbs lean ground beef (93% lean)
2 cups uncooked white rice
1 bag Trader Joe's Assorted Chopped Peppers (about 16 oz)
4 cups beef bone broth
1 can black beans, rinsed and drained
½ jar pickled jalapeños, chopped
Salt and pepper to taste
Directions
Brown the ground beef in a large Dutch oven or pot.
Add the chopped peppers and cook for 3 to 4 minutes.
Stir in the rice, black beans, jalapeños, salt, and pepper.
Pour in the bone broth and bring to a boil.
Reduce the heat to low, cover, and simmer for 18 to 20 minutes, or until the rice is cooked.
Let stand for 5 minutes, then fluff before serving.
