Lazy High-Protein Soup

If the goal is to eat lean consistently, the process has to be really simple.

The more barriers you remove from food prep (i.e., time, cost, and complexity) the easier it is to stay on track. This recipe of mine is a straightforward, high-protein soup that comes together in minutes. It doesn't require any obscure ingredients whatsoever.

Ingredients

  • Olive oil
  • Garlic (about 2 small cloves)
  • 1/4 white onion
  • 2–3 cups chicken bone broth
  • 1 can white potatoes (or 1 large boiled white potato)
  • 1 can white beans, rinsed and drained
  • Fresh spinach (at least one handful)
  • Optional: shredded Parmesan

Instructions
In a pot, heat a small amount of olive oil and sauté the garlic and onion until lightly browned.

Add the chicken bone broth, potatoes, white beans, and spinach. Cover and let cook over medium heat for up to 10 minutes.

Once cooked, blend using an immersion blender or a standard blender. If using a traditional blender, allow the soup to cool slightly and ensure proper ventilation to release steam.

Serve as is, or top with a small amount of shredded Parmesan for added flavor and protein.

Nutrition (approximate)
~300 calories per serving (half the batch)
~60 grams of protein per full batch
