"I Feel Fit" Flapjacks

I get asked often, "Harley, can performance and leanness coexist with comfort foods like chocolate chip pancakes?"

My answer, based on years of experience, is unequivocally YES.

These 'I Feel Fit' flapjacks serve as a prime example of how you can satisfy cravings without compromising your fitness goals. The key is in adding whole food ingredients and keeping in mind your nutrients. Here, each flapjack contains approximately 50 calories and provides 5 grams of protein. This density allows you to consume a satiating portion while maintaining strict control over your macronutrient targets.

This recipe is intentionally straightforward:

  • 2 cups of liquid egg whites
  • 2 cups of rolled oats
  • 2 ripe bananas
  • 1 tablespoon of natural peanut butter
  • A controlled measure of vanilla extract

Preparation steps:

  1. Combine ingredients in a high-speed blender (or whisk together, breaking down the bananas especially).
  1. Blend until the mixture is mostly smooth, but stop just short of liquifying the oats completely. A slightly textured batter enhances the final consistency.
  2. Cook on a non-stick surface as you would standard pancakes (we use a griddle).
