Creamy Parmesan Cauliflower Soup

This is one of those soups that feels indulgent but is quietly doing a lot of nutritional work for you. It’s rich, comforting, and satisfying. It does NOT rely heavily on cream (though you'll see me adding a lot of Parmesan.... for protein, of courcce).

It delivers just over 300 calories, nearly 32 grams of protein, and 7 grams of fiber per serving.

This is essentially an entire meal in one bowl.

How I Make It:

Start by adding the following to a pot:
- 4 cups chicken bone broth
- 1 head of cauliflower
- 1 white potato, chopped with the skin on
- ½ onion, chopped
- 1 clove garlic, mashed

Instructions:

- Cook until all the vegetables are soft and fully tender.
- Once the mixture has cooled slightly, transfer everything to a blender and add:
- 2 cups shredded Parmesan
- 1 can white beans, drained and rinsed
- Blend until silky smooth. That’s it!

This recipe makes four servings and reheats beautifully. It’s filling, protein-forward, and proof that comfort food doesn’t need cream to feel luxurious.
